Rainbow Smoothies are proof that fruits and vegetables are fun and beautiful!
I love all of the different colors of smoothies. I have made red (berry) smoothies, orange (mango) smoothies, green (spinach) smoothies and purple (blueberry) smoothies. I even made rainbow smoothies with my son's preschool class; the kids loved brainstorming fruits and vegetables for each color and blending it all up into one tasty concoction. This time, however, I wanted to make a rainbow smoothie that was actually layered like the rainbow. There is no science to smoothies so you can adjust and change up the ingredients to your liking. The optional garnish of whipped cream clouds and gold chocolate coins turns the healthy snack into an even more festive treat, perfect for St. Patrick's Day or any other day when you simply want to celebrate colors, rainbows, and the natural beauty of healthy foods.
