This was a super fun event to plan (and attend) with my mother-in-law who is in a great ladies bunco club that just started in her neighborhood. Being we wanted to keep this very homespun and low key it turned into a family affair of helpers (Thanks everyone!). She wanted it to be special but very casual. We set up a cute Cinco de Mayo Mexican themed beverage station complete with real cactus (ouch), Margaritas, Jarritios soda in coordinating colors, Wine, and of course mini bottles of Patron (so adorable). We decided on a buffet of Taco Salad (easy to make and set up) with homemade flour taco shells and all the fun add your own fixings. My brother in law makes the most heavenly ceviche so we drug him into the party planning mix and begged him to make us a divine batch. We displayed it in mini cups to munch on. We made mini pepper poppers in the red, yellow, and orange theme (see DIY Tutorial for easy fabulous recipe). Since I love sending guests home with edible take-home-treats we also made a batch of spicy salted caramel popcorn for the Bunco girls to take home (Google SmittenKitchen.com for step by step instuctions-thanks SM...it was a perfect munchie after a night of drinking and yelling Bunco).
