We truly wanted to make this an event to remember. We served an 80ib. pig we had butterflied at a local butchers (South Shores Butchers, San Pedro, CA). We built a temporary fire pit out of breeze blocks and used rebar for the 'grill'. The pig is actually cooked 'Cuban Style' rather than using the Hawaiian method as not many places have an available area to be diggin a pit!. We also cooked a noodle dish, table-side in an enormous wok we bought downtown (China Town L.A.) and the bruner from my husbands turkey fryer.) We set up separate areas for the main buffet, a kids buffet a dessert station and the indoor bar area where we served specially created jello shots as the lady who's anniversary it was nick-name is 'huggy bear'.
