Amalfi Style Fruit Salad
Serves: 4


2 big oranges, halved, any leaver kept on
2 big handfuls of wild strawberries, or normal strawberries, quartered
2 teaspoons vanilla sugar or granulated sugar
a couple of swigs of grappa or limoncello


Halve the oranges and use a spoon or a grapefruit knife to carefully remove the orange flesh, ensuring the orange half stays intact. Cut up the flesh, getting rid of any pith, and put it into a bowl with the strawberries. If preparing this in advance, the fruit can go into the fridge until you’re ready to eat it.

Just before serving, sprinkle with the vanilla sugar (adjusting the amount according to the sweetness of the fruit) and add a little swig of booze to lift it up a bit – I use grappa or limoncello. Give the fruit a couple of tosses to mix it together, and spoon the fruit and juice back into your halved oranges. Serve straight away.
