Baked Banana Oatmeal


Ingredients:

Bananas

2 sliced bananas

1 mashed banana



Dry Ingredients

2 cups rolled oats

1 tsp baking powder

1/4 tsp kosher salt



Wet Ingredients

1 egg, beat

1 mashed banana

1.5 cups skim milk

1 tsp vanilla



Topping

1 heaping tablespoon brown sugar


 

Directions:

Arrang bannas in a pattern on the top (and/or bottom!) of the dish



Combine dry ingredients (oats, baking powder, salt)



Combine wet ingredients (eggs, mashed bananas, skim milk, vanilla)



Pour wet ingredients into the dry. Mix well.



Line an 8" (square or round) with parchment paper (for easy removal and cutting)



Layer some banana slices on the bottom. Pour batter into pan. Top with remaining banana slices.



Bake at 375 degrees for 26 minutes



After 26 minutes, increase heal to broil, sprinkle oatmeal with brown sugar and broil for 3-4 minutes.
