Beet pizza with Honey and Chevre

Ingredients:
1 cup lunk warm water
1 tablespoon honey
1 tablespoon dry yeast
2.5 cups flour
1 teaspoon salt
4 tablespoon olive oil
Filling:
2 shallots, thinly sliced
1/2 squash, thinly sliced
4 roasted beets, peeled and cubed
4 table spoons olive oil
2 tablespoons honey
200 g chevre
Directions:
Start with the dough:
In a bowl mix water, honey and yeast.
Leave it for 5 minutes so that the yeast starts to work.
Add flour, salt and oil.
Work the dough well together.
Cover with plastic and let it rise for 1 hour.
On a baking tray press the dough out with your fingers to form a large pizza.
*Adding some honey to the dough makes it extra crispy.
Filling:
Place shallots, squash and beets on the pizza dough.
Drizzle with oil and honey.
Bake at 350F/200C until golden, about 12 minutes.
Take it out and crumble the chevre over the pizza.
Serve.
