Greek Salad

Greek Salad
Serves: 4


7 tablespoons olive oil
3 tablespoons white or red wine vinegar
Pinch of dry mustard
Salt and pepper

2 heads romaine lettuce
2 large, ripe tomatoes, chopped
1 cucumber, peeled and sliced
1 red onion, thinly sliced
1 green pepper, seeded and cut into strips
1/3 cup Kalamata olives
4 ounces diced feta cheese (1cup)
2 teaspoons chopped fresh oregano or 1 teaspoon dried


Make the dressing by combining the olive oil, vinegar, mustard, and a little salt and pepper in screwtop jar. Shake well. Taste the dressing and add more salt and pepper if necessary.

Place the lettuce leaves in a salad bowl or on a platter. Arrange the tomatoes, cucumber, onion, bell pepper, olives, feta, and oregano over the lettuce. Drizzle some of the dressing on top and serve the rest alongside.
