Grilled Chicken Salad with Fresh Fruit and a Cilantro Vinaigrette

Ingredients:
Salad:
1 head lettuce
2 avocados, peeled and sliced
1 orange, sliced
1 papaya, peeled and sliced
1 mango, peeled and sliced
1 chicken breast
salt and pepper to taste
Marinade:
1 lime, juiced
½ cup olive oil
¼ cup cilantro
salt and pepper to taste
Directions:
Trim, wash and cut the lettuce into bite sized pieces. Transfer to a large bowl. Prepare the marinade by combining the lime-juice, cilantro and salt and pepper. Whisk in olive oil to create an emulsification and let sit.
Prepare the fruits and marinate in the dressing while cooking the chicken.
Season the chicken with salt and pepper and grill over a hot grill pan for 5-6 minutes on each side and ensure that it is completely cooked through.
Add the marinated fruit and chicken to the bowl of lettuce and toss to combine. Garnish with additional cilantro leaves.
