Oatmeal Chocolate Chip Picnic Cookies


1 1/2 cups whole wheat pastry flour

1 cup rolled oats

1/2 tsp baking soda

1/2 tsp salt

3/4 butter, softened

1 cup brown sugar

1/4 cup white sugar

1 tsp vanilla

2 eggs

1 1/2 cups chocolate chips

1/2 cup chopped walnuts or pecans (optional)


Pre-heat the oven to 325 degrees.

Combine the flour, oats, baking soda and salt in a medium sized mixing bowl and set aside.

Using an electric hand mixer, or old-fashioned hand beater, beat the butter until smooth.  Add the sugars and mix until well combined. 

Add the vanilla and eggs and continue mixing until you arrive at a smooth consistency.

Add the dry ingredients to the wet and stir to combine using a wooden spoon.  Add the chocolate chips and nuts and mix in with the spoon or your fingers.

Drop large tablespoons of dough onto parchment-lined baking sheets and bake for 16 minutes.

Remove and set aside for five minutes to cool.

Store a room temperature, in an air-tight container for up to three days.
