Papaya and Black Bean Salsa

Papaya and Black Bean Salsa


1 cup cooked black beans, rinsed and drained
1 ripe papaya, cut into small dice
2 red peppers, cut into small dice
1 red onion, cut into small dice
2 jalapenos, minced
3 Tbsp chopped cilantro
2 tsp dried Mexican oregano
3 Tbsp minced fresh ginger
¼ cup olive oil
2 limes, juiced
1 tsp ground black pepper
2 tsp kosher salt


Combine all ingredients and adjust seasoning. Cover and refrigerate if not serving immediately.
