Puree the strawberries in a blender. Strain through a fine mesh sieve into a small bowl, discard the pulp and seeds. Stir in the sugar until dissolved. Place 1 tablespoon of the puree in each champagne glass and fill with the sparkling wine; stir gently. CHEF'S TIP: Substitute other seasonal fruit for the strawberries. Watermelon is a delicious option.
