Spiced Squash

Spiced Squash
Serves: 4


½ cup chopped sun-dried tomato, soaked for 2 hours and drained
2 Tbsp cold-pressed, extra-virgin olive oil
1 Tbsp minced fresh oregano
1 Tbsp minced fresh basil
1 Tbsp minced fresh dill
1 Tbsp minced fresh sage
1 Tbsp Himalayan salt
2 zucchini, sliced
2 yellow summer squash, sliced


In a mixing bowl, combine the sun dried tomatoes, oil, onion, chopped fresh herbs, and salt. Add the sliced squash and toss to coat. Marinate for 2 hours before serving.

TIP: the more you marinate, the better the veggies can absorb the spices and the tastier they will be.
