Cucumber Salad with Pomegranates and Mint
1 large cucumber
1 large garlic clove
2 heaped tablespoons mint leaves, plus sprigs to garnish
2 tablespoons lime juice
Sea salt and freshly ground black pepper
Peel the cucumber, slice thinly at an attractive angle and place in a bowl.
Cut the pomegranate into quarters and turn out the skin to make it easier to remove the seeds. Discard any yellow pith that comes away as well. You need about 6 tablespoons of the seeds. Place them in a bowl with the cucumber.
Smash the garlic with salt in a mortar and pestle or with a knife and finely chop the scallions and mint. Add all these ingredients and the lime juice to the bowl and season with salt and pepper. Mix well and leave to marinate a little if you have time before serving.
