Yesterday morning I went on one of our local news stations in San Diego to talk about Halloween Party Ideas – and decided to focus on creative food & drink ideas that are actually lower in sugar. One of my favorite things on the table was this super easy and light Halloween Drink Recipe: Ghoul-egranate Punch with a “Speared Eyeball” Garnish. This is a pomegranate juice based punch that’s been significantly lightened up by cutting the juice with club soda and adding sweetness with a no-calorie sweetener. You can actually reduce the calories or sugar in any of your favorite juice or soda based drinks using the same exact method. For Halloween celebrations, the “eyeball” garnish definitely adds a playful, creepy element! Learn how to make it below…

Ghoul-egranate Punch
Yield: 10 servings
Serving Size: 8 fl. oz
Ingredients:
– 16 fl. oz pomegranate juice
– 48 fl. oz club soda
– 16 fl. oz black cherry selzter
– 2 Tbsp. (12 packets) sweetener
– 1 Tbsp. lime juice
– Canned lychee fruit, drained
– Red raspberry preserves
– Blueberries
Directions:
Combine all drink ingredients into a pitcher or punch bowl and stir until combined. Serve over ice.
Garnish:
Dry the lychee fruit and fill the cavities with preserves. Insert a blueberry, blossom end facing out. Spear with a toothpick or cocktail skewer.
