Happy last Friday of 2013! Yep… Christmas may be over already, but we’ve still got New Year’s Eve to look forward to next week! :) Speaking of New Year’s Eve, I’ve teamed up with NECTRESSE® Natural No Calorie Sweetener again this holiday season to develop and share some creative holiday entertaining tips, including recipe ideas that are sweet like we love, but also lower in sugar.

One of my favorite recipes is this Sweet Butterscotch Pudding, which is pictured above. In this recipe, we swapped 1/3 cup of white sugar for 4 tsp. of NECTRESSE®, and it looks super cute served in ramekins OR in small ice cream cones! It’s the perfect New Year’s treat to serve to guests who want to keep their portion sizes in check.

The other NYE-friendly recipe I’m sharing today is a low sugar Winter Grape Sparkler, which is a breeze to make! The club soda adds a lot of sparkle and significantly cuts the amount of juice required, while NECTRESSE® sweetens things up without all the extra calories of added sugar. Want to try a fun twist on the traditional New Year’s Eve “Countdown Toast”? Try serving this recipe up – and swapping out the club soda for champagne for party guests that want to enjoy a more grown up toast!

Sweet Butterscotch Pudding

(makes 4 servings)


1/2 cup brown sugar
3 tablespoons cornstarch
2 eggs
1/8 teaspoon salt
2 cups milk
¾ cup butterscotch chips
cool whip for serving
crushed toffee bits for garnish (optional)


Whisk together NECTRESSE, cornstarch, and milk in pan. Cook over medium heat until mixture starts to thicken slightly.

Whisk eggs together in a small bowl, then temper the eggs by slowing adding in about ½ cup of the hot milk mixture. Pour the egg mixture back into the remaining milk mixture. Add salt and continue cooking over medium heat until thickened.

Remove from heat and add butterscotch chips, stirring until they are completely melted. Strain pudding through a fine mesh stranger to remove any lumps.

Dish into 4 small dessert bowls or ramekins and let cool. Right before serving, garnish with a dollop of cool whip and crushed toffee bits (optional).

White Grape Sparkler

(makes 10 servings)


3.5 cups white grape juice
1/4 cup fresh lime juice
4 tsp (or 8 packets) NECTRESSE® Natural No Calorie Sweetener
5 cups chilled club soda or champagne


Combine grape juice, lime juice, and NECTRESSE in a pitcher and mix well. Just before serving, divide the juice mixture evenly among 12 champagne flutes or wine glasses, then top off with chilled club soda (approximately 4 oz per glass).

Cocktail Option: top off with champagne instead of club soda
