If you’re looking for a pro-looking mermaid party cake that’s actually easy and won’t *deep-dive* into your budget 😜 – this idea’s for you! I love beautiful cakes, but don’t have those awesome “edible topper” skills (or patience) myself – so I usually rely on printable cake toppers to save the day. This mermaid birthday cake is one of my all-time favorite examples.

It starts with a super-easy frosting technique (“wavy peaks” made with the back of a spoon) and some brown sugar “sand”. The big finish is a print-and-cut mermaid tail & splashes to give the effect that she just dove right into the cake!

MERMAID SPLASH CAKE

You’ll need:

• two boxes of white cake mix
• food coloring
• 4 tubs of frosting
• brown sugar
• Sixlets or similar candy-coated chocolates
• printable mermaid cake topper
• white card stock (I always use this paper)
• bamboo skewers
• scissors
• hot glue gun (or tape)

Instructions:

1. Tint one of the cake batters purple and the other teal. Bake each cake in two (8” or 9”) round cake pans.

2. When cool, use a serrated knife to level the top of each cake layer if necessary, so they will stack evenly.

3. Use 2 tubs of white frosting between the layers and around the outside of the cake to create a smooth base layer (or “crumb coat”). Refrigerate for an hour.

4. Tint the remaining 2 tubs of frosting blue and apply them generously to the cake. Use the back of a spoon to create “waves” in the frosting, all over the cake.

5. Cut out the printable mermaid tail and waves. Hot glue (or tape) them to bamboo skewers, then them into the top of the cake.

6. Garnish the cake with brown sugar “sand” and colorful, candy-coated chocolates.
