The BEST projects are the ones that don’t take a ton of effort, yet still turn out super cute AND make people really happy. Am I right, or am I right?! This is one of those projects. 🙌

These adorable Patriotic Cookie Ice Cream Sandwiches are perfect for celebrating the 4th of July.

You’ll need 4 things to make them:

  1. sugar cookies
  2. vanilla ice cream
  3. a star-shaped cookie cutter
  4. red/white/blue sprinkles

I used Krusteaz® Butter Vanilla Sugar Cookie Mix for the cookies and used the “Cut Out Cookie” recipe on the back of the box, which means adding 1/3 cup butter + 1 egg to the mix. Easy-peasy! 😋

Instructions for the ice cream sandwiches are below, but I have one more fun thing to share first… a brand new set of patriotic printables that you can download here for FREE!

I started with designing some Mini Party Flags to dress up these ice cream sandwiches but decided they needed some accessories to match. SO, you’ll find an 8×10 Sweets Sign, two 4×6 Signs, and a USA Banner here as well. Enjoy!

I used the Mini Party Flags on toothpicks for the ice cream sandwiches, but they also look really cute on straws. (See above.)

Since these party flags are on the shorter side, you’ll need to fold them in half, glue the 2 sides together, then hot glue them to straws. You can glue them around the toothpicks though.

And now back to the ice cream sandwiches…

Patriotic Cookie Ice Cream Sandwiches

Steps:

1. Make star-shaped sugar cookies.
I used Krusteaz Butter Vanilla Sugar Cookie Mix (+ 1/3 cup butter & 1 egg) for these. Make sure to chill the dough for a while to make it easier to cut with a cookie cutter.

2. Make ice cream stars.
Line a baking pan with parchment paper. Scoop store-bought vanilla ice cream into it, then let it soften for a bit until it can be spread out across the pan. You want it somewhere around 1″ or so in thickness.

Refreeze until firm, then cut out your stars, using the same cutter you used for the cookies.

3. Sandwich time!
Place an ice cream star between 2 cookie stars. Flip the bottom cookie upside down so that both sides of the finished treat show the “pretty” side of the cookie.

4. Pour on the Sprinkles
You actually want the ice cream stars to be a teensy bit soft/melty so that the sprinkles will stick to it, so you might need to wait a couple of minutes after making your sandwiches for them to soften up.

Dump generous amounts of sprinkles on while turning your cookie sandwich. Hold the sandwich over a bowl to catch the extra sprinkles.

Done! Return to the freezer immediately until ready to serve.

Since we were taking pictures of these, they were out of the freezer longer than usual and got super melty. Still tasted awesome though! I kind of think the look on my daughter’s face says it all. 😉
