Raspberry & Lemon Cream “Martinis”

Raspberry and Lemon Cream Martinis

With the great response everyone had to the gorgeous food presentation from the Contemporary Urban Baby Shower, it reminded me of one of my favorite pretty “party desserts” from Bite-Size Desserts that I’d love to share with you…

These Raspberry & Lemon Cream “Martinis” are served in mini martini glasses and look as good as they taste!

Raspberry and Lemon Cream Martinis

You can also swap out the raspberries for blueberries or blackberries to mix up the flavor a bit – or to tailor the colors to your party theme. (They also look great with a combo of berries!)

(Full recipe below.)

RASPBERRY AND LEMON CREAM MARTINIS

{via Bite-Size Desserts}

Ingredients:

  • 1/2 cup heavy whipping cream
  • 1/2 tsp pure vanilla extract
  • 1/2 cup chilled lemon curd
  • 3/4 cup fresh raspberries
  • 1 tsp finely grated or minced lemon zest

Directions:

1. Whip the cream in a chilled bowl of an electric stand mixer with the wire whip attachment OR in a chilled large mixing bowl using a hand-held mixer on medium speed until frothy.

2. Add the vanilla and continue to whip until the cream folds soft peaks.

3. Stir the lemon curd to make sure there are no lumps. Gently fold the lemon curd into the whipped cream in 2 stages, blending thoroughly.

4. Fit a 12- or 14-inch pasty bag with a large open star tip and fill the bag partway with the lemon cream. Pipe the cream into the mini martini glasses, filling them one-third full.

5. Set aside 6 raspberries for garnishing the tops, and arrange 3 or 4 raspberries over the cream in each glass, laying them on their sides. Pipe the remaining lemon cream over the raspberries to fill the glasses.

6. Place a raspberry, with the pointed end facing up, on top of the lemon cream in each glass, and scatter lemon zest over the top.

STORAGE TIP: Refrigerate the martinis, loosely covered with waxed paper and then tightly wrapped with plastic wrap, up to 3 hours before serving.

ENJOY!

Looks great! I’ve never had lemon curd…is it really tart n’ tangy? What is the cute font you used with the curly tops??

I am considering making these for a bridal shower tomorrow… how many does this typically make? I know it depends on the size of the glass but how many glasses did this fill when you made them?

    Traci –
Lemon curd is pretty tart, but still sweet :)

And the font you asked about is called “Albemarle Swash”.

This looks delicious but as I am a novice forgive me for this question; where can I find lemon curd?
